I have to replace the server computer at my office tomorrow, and would like to know if it is possible to keep all user accounts and server information, etc. Essentially, I just want to replace the computer without having to recreate the network.

If you’re going to be replacing it with a device of same HDD size, why not create a clone of the HDD and simply ghost it into the new machine?
Other than that, you’re going to need some kind of backup.
